What is matcha powder?  

  

Matcha is a finely ground green tea powder. Its bold flavor not only makes delicious lattes but is also used in various recipes to add a sweet earthy taste and vibrant green hue. Matcha powder can be found near the alternative flours and thickening agents in the baking aisle.

Plain Greek yogurt: Plain Greek yogurt is the base for this recipe. Feel free to use a flavored yogurt or non-Greek yogurt as well.  

    

Matcha powder: Matcha powder is mixed with white chocolate and swirled into the yogurt. It adds a beautiful pop of color and a rich flavor that balances the white chocolate's sweetness. 

  

Sugar-Free White Chocolate: Low-carb white chocolate provides a sweet and mild taste that takes this yogurt bark to the next level. Be sure that the dish you’re melting the chocolate in is completely dry otherwise, the water can cause it to seize-up after heating. 

  

Berries: Fresh berries are sprinkled across the yogurt bark. They provide a fresh, juicy bite and complement the earthy matcha flavors. For this recipe, we’re using raspberries but you can use strawberries, blackberries, blueberries, or a mix. 

   

Coconut oil: Coconut oil helps the white chocolate become smooth once melted. 

  

How to avoid icy yogurt bark 

   

When frozen, yogurts that contain a lot of water tend to form ice crystals. To avoid this, choose a thick yogurt that is made with whole milk. These tend to have less water than non-fat yogurts and therefore form less ice. Not all non-fat yogurts will become overly icy, however. Try out a few different brands and see which one fits your preferences the best.  

    

It’s also important to distinguish whey from water. If your yogurt has liquid accumulating at the top, it’s not water. It’s simply whey that has separated and can be stirred back into the yogurt. This will not make your yogurt bark icy.  

  

     

Variations and Substitutions 

   

Swap the yogurt: Coconut yogurt and dairy-free yogurts will work in this recipe too. They can add a dynamic flavor and complement the nutty taste of the granola.  

   

Skip the matcha: If you’re not a matcha fan, you can still enjoy this recipe. Swirl in your favorite flavors such as peanut butter or melted sugar-free milk chocolate instead. Try adding a few spoonfuls of jam, honey, or even using two flavors of yogurt.

Matcha Yogurt Bark Tips 

   

Don’t make it too thin: Avoid spreading the yogurt overly thin and feel free to add a few spoonfuls of yogurt to any areas as needed. It should be at least 1/4-inch thick.  
   

Always use parchment or foil: Don’t make the bark directly onto a pan because it will be difficult to pick up and break into pieces.  

   

Let it warm at room temperature for 3-5 minutes before eating. It will taste extra creamy and be easier to bite into.   

  

Only take out a serving at a time: The yogurt will melt back to its regular form quickly so only remove from the freezer what you plan on eating right away.

Matcha Yogurt Bark

Yield: 6 snack-sized servings  

  

Ingredients 

1/4 cup low carb white chocolate chips 

1 teaspoon refined coconut oil 

1 teaspoon matcha powder 

2 cups plain Greek Yogurt  

1/2 cup raspberries  

1/3 cup Vanilla Strawberry NuTrail Granola, finely chopped  

 

Directions

1. Place the white chocolate chips into a microwave-safe bowl. Microwave for 45 seconds.  Stir in the coconut oil until smooth. Heat for 10-15 additional seconds if needed.    

2. Whisk the matcha into the white chocolate until smooth.    

3. Cut an 8x8” piece of parchment paper and place it onto a cutting board or sheet pan. Spread the yogurt into a 4x6” rectangle, about 1/4 inch thick. 

4. Drop spoonfuls of the white chocolate mixture onto the yogurt. Use a knife to swirl the chocolate into the yogurt.  

5. Scatter the raspberries across the yogurt and sprinkle generously with granola. Place into the freezer for at least 4 hours until the yogurt is firm.     

6. Once frozen, break into pieces or cut into even shapes. Place into a freezer-safe storage bag to store for up to one month. Serve cold.
