This granola is not only tasty but also has simple nutritious ingredients.
Peanut Butter- Opt for a natural, no sugar added peanut butter if you’re avoiding excess sugar. Smooth peanut butter will work the best but you can use chunky if you like some extra crunch. Freshly ground peanut butter, often found at local health food stores, is an excellent option for this as well. When working with natural peanut butter, just be sure to stir it before using since the oil tends to separate. Storing the jar in the fridge after mixing can help avoid it separating again.
Chocolate Chips- Low carb chocolate chips contribute to the depth of the fudges flavor and act as a base for the texture. They also help the fudge set up in the fridge. Be mindful of the sweetener used in the chocolate chips and look for those that use natural sweeteners such as stevia. If you’re not low carb, feel free to use regular milk chocolate or semi-sweet chocolate chips, they will work just as well.
How to Store 3 Ingredient Fudge
Store three ingredient fudge in the refrigerator. Keep it covered in an airtight container or storage bag. If it sticks together, separate the pieces with a small square of parchment paper. Fudge will keep for 4-5 days for the best fresh taste.
What size pan do I need?
This recipe was developed using a 9x5-inch loaf pan. If you use a different sized pan, it could affect the outcome of your fudge. A larger pan may cause the fudge to be much thinner whereas a smaller pan could make it overly thick and cause issues setting. Alternatively, you can use a lined muffin pan and separate the fudge evenly between the cups.
Tips and Substitutions
When heating the ingredients, be sure that they are hot enough to fully melt and don’t leave chunks remaining. You don’t want to scorch the chocolate chips but the mixture should be hot enough that it’s pourable and completely smooth.
Use a different flavored granola- Try out your favorite flavors of NuTrail to top this decadent treat. If you love dried fruit with chocolate our Vanilla Strawberry and Blueberry Cinnamon are excellent choices.
Chocolate chip alternatives- Experiment with different types of chocolate chips such as white chocolate or dark chocolate to alter the intensity and sweetness of the fudge. You can even mix the amounts to make a swirled batch.
Experiment with nut butters- Swap out the peanut butter for other varieties such as almond or cashew. Each will bring its unique taste to the fudge allowing for a range of delicious variations.
Why is my fudge melting?
If your fudge is melting, it may not have been chilled long enough or has been sitting out of the fridge for too long. Keep in mind that the fudge is sugar-free and acts differently than its sugar-filled counterpart. Regular fudge is often crystallized sugar which maintains its structure. Without it, there is a greater need for refrigeration and mindfulness about how long it has been sitting out.
