This Breakfast Fruit Tart features a crunchy granola crust filled with creamy Greek yogurt and topped with vibrant, fresh fruit. Perfect for breakfast or a quick snack, this wholesome treat is packed with protein, vitamins, and healthy fats, making it a satisfying choice you can feel good about.

Ingredients

  • 2 cups NuTrail Vanilla Strawberry Nut Granola, finely ground

  • 3 tablespoons unsalted butter, melted

  • 1/2 cup plain Greek yogurt

  • 1 cup assorted berries, sliced or chopped into bite sized pieces as needed

Directions

  1. Place the granola into a food processor and pulse 5-8 times until mostly broken down into smaller pieces. Scrape the granola into a medium bowl and pour the melted butter into the same bowl. Use a rubber spatula to mix the granola and butter together until a wet sand-like consistency that stays together when pressed between your fingers forms.

  2. Place 2-3 tablespoons of the mixture into the bottom of a large 6-cup muffin tin greased with cooking spray and press to firmly to pack; the back of a small measuring cup can help with this. You can also use cupcake liners. Alternatively, you can use a tart pan with a removable bottom. Place into the fridge for 30 minutes to set or in the freezer for 15 minutes.

  3. Pop the granola cups out of the muffin tin using a spoon, then spoon 2-3 tablespoons of yogurt into each cup. Top with fruit as desired. Serve immediately or chill for 1-2 days in an airtight container.
